My first stop on a four-day food and fun trawl of Waterford, Wexford and East Cork, with friends Diarmuid and Steve, was high in the hills of Co Waterford, in the shadow of a fairytale castle with a history and mystique that outshines any Disney movie.
Built in 1185 by King John, Lismore Castle’s owners down the years include the likes of Sir Walter Raleigh and Richard Boyle, the 1st Earl of Cork. In 1753, it passed to the Cavendish family, and to this day remains the Irish home of Peregrine Cavendish, 12th Duke of Devonshire and his wife. Having a close relationship with the royal family — Lismore is where Charles took Camilla on announcing their engagement — just last month the foursome shared the royal carriage at Ascot.
