With considerable courage and enterprise, Santosh Thomas and his wife Milie Mathew opened their 3 Leaves food stall in Blackrock Market, Co Dublin, back in 2016, working then from a tiny kitchen with an equally small area for dining-in. The people came, the people returned, the people became regulars. Roll on seven years and 3 Leaves is something of a phenomenon.
Having since expanded train-like into neighbouring units, adding a state-of-the-art kitchen and extra dining space inside and out, they soon garnered a recommendation in the Michelin Guide.
