While chefs and others in the industry were in lockdown, they certainly weren't hanging around picking daisies. Au contraire, as President Macron is wont to say frequently to Boris Johnson; in the midst of a terrible situation, chefs have been working harder than ever, innovating with amazing food boxes, community projects, revamping offerings and developing their skills.
This was evident on my recent visit to Eamonn O'Reilly's Greenhouse. Here, executive chef Mickael Viljanen is bringing a new level of exquisite to the table with dishes that are sophisticated, stunningly presented, and, above all, excel in flavour.
